This is one of the most delicious and classic winter cake and who doesn’t want to have a generous piece of plum cake along with hot beverage, be it hot chocolate Yumm , hot coffee or tea…
On a lazy winter afternoon, have a piece of cake and a coffee in a cozy corner with a fireplace.
But first you need to bake this cake, it is a fairly easy cake and it requires very few ingredients too..Some say, this cake is only for Christmas but I say plum cake is for winters.
So let’s bake Plum Cake
Firstly, grease a round or a square tin with a butter or oil and leave it aside.
Preheat oven at 170 degree C.
Sieve together 1 cup wheat flour and ½ cup maida (all purpose flour) ¼ tbsp cinnamon, grated nutmeg and ½ spoon of baking powder.
Now mix 2/3 cup of butter, a cup of chopped plum and cashew nuts and 1 cup powdered sugar.
Fold this gently not vigorously and then add ½ cup soy milk and later ½ tbsp baking soda.
Stir this bubbly mixture gently and transfer to the cake batter.
Bake at 170 degree C for 30 minutes to 40 minutes.
When the baking is finished, cool it down on the rack and then remove from the cake pan.
Now it is time for savouring the cake, you can either decorate or have it as it, cut a piece and serve along with a hot tea, coffee or hot chocolate.
