Quick Vegan Breakfast Sandwiches

Some people will try to tell you that all breakfast sandwiches involve bacon, egg, and cheese. We give you permission to throw the firmest soy product you can find at such people. Sure, if you’re down to bring home the bacon, the beloved B.E.C. is convenient, filling, and downright delicious. But for us vegans, sticking to this standard would mean eating-just-bread.

Don’t give up hope just yet! Despite what breakfast sandwich purists would have you believe, there are plenty of plant-based options when you’re craving a sammie at sunrise. Packed with protein and flavor, these vegan breakfast sandwiches hit the spot.

1. Spicy Blackened Chickpea Sandwich

If you need something beyond an alarm clock to wake you up in the morning, this flaming fried chickpea breakfast sandwich might do the trick. Tossed in paprika, coriander, cumin, and of course cayenne, this chickpea scramble brings the heat. Crank it up by adding some harissa sauce or lighten things with a dollop of hummus or cashew cream. Want a little more protein? Toss in some tofu or ground seitan.

Though we love this combo on a soft ciabatta roll, you can always throw it on a bagel to fit your morning mood.
